- 2 cups fresh spinach (or thawed and drained frozen spinach)
- 1 cup ricotta cheese
- 1/2 cup cream cheese
- 1 cup mozzarella cheese, shredded
- 1/4 cup Parmesan cheese, grated
- 2 cloves garlic, minced
- 1/2 cup onion, diced
- Salt, to taste
- Pepper, to taste
- 1 tablespoon olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Add diced onions and minced garlic, sautéing for 3-5 minutes until soft.
- Stir in the fresh spinach and cook until just wilted, about 2-3 minutes.
- In a mixing bowl, combine the spinach mixture with ricotta, cream cheese, mozzarella, and Parmesan. Stir well.
- Season with salt and pepper.
- Transfer the mixture into a baking dish and bake for 20-25 minutes until hot and bubbly.
- Let it cool slightly before serving with pita chips or fresh vegetables.
Notes
Ensure spinach is well-drained if using frozen to prevent a watery dip. You can use low-fat or non-dairy cream cheese for lighter alternatives.
