A delightful tart featuring caramelized onions and roasted butternut squash, all wrapped in flaky puff pastry.

- 1 sheet of puff pastry
- 1 medium butternut squash, peeled and cubed
- 2 large onions, sliced
- 2 tablespoons olive oil
- 1 teaspoon fresh thyme
- Salt and pepper, to taste
- 1 cup grated cheese (Gruyère, goat cheese, or feta)
- 1/2 cup heavy cream or a plant-based alternative
Instructions
- Preheat your oven to 400°F (200°C).
- Peel and cube the butternut squash into small ½-inch pieces.
- In a large skillet, heat the olive oil over medium heat. Add sliced onions and a pinch of salt, stirring periodically. Cook for about 20-25 minutes until golden brown and tender.
- In a separate baking dish, toss the cubed butternut squash with a drizzle of olive oil, salt, and thyme. Roast it in the oven for 25 minutes or until fork-tender, stirring halfway through.
- Once the onions are caramelized and the squash is roasted, combine them in a large bowl. Mix in the cheese and heavy cream until everything is well-coated.
- Roll out the puff pastry on a lightly floured surface to fit your tart or pie pan. Transfer the pastry into the pan and trim excess.
- Spoon the butternut squash and onion mixture into the prepared pastry shell evenly.
- Place the tart in the preheated oven and bake for 25-30 minutes or until the pastry is golden brown and filling is bubbling.
- Allow the tart to cool for about 10 minutes before slicing.
Notes
Serve with a side salad or pair with a crisp Chardonnay. For extra flavor, garnish with fresh herbs or red pepper flakes.
