Description

Ingredients

  • 1 sheet of puff pastry
  • 1 medium butternut squash, peeled and cubed
  • 2 large onions, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon fresh thyme
  • Salt and pepper, to taste
  • 1 cup grated cheese (Gruyère, goat cheese, or feta)
  • 1/2 cup heavy cream or a plant-based alternative

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and cube the butternut squash into small ½-inch pieces.
  3. In a large skillet, heat the olive oil over medium heat. Add sliced onions and a pinch of salt, stirring periodically. Cook for about 20-25 minutes until golden brown and tender.
  4. In a separate baking dish, toss the cubed butternut squash with a drizzle of olive oil, salt, and thyme. Roast it in the oven for 25 minutes or until fork-tender, stirring halfway through.
  5. Once the onions are caramelized and the squash is roasted, combine them in a large bowl. Mix in the cheese and heavy cream until everything is well-coated.
  6. Roll out the puff pastry on a lightly floured surface to fit your tart or pie pan. Transfer the pastry into the pan and trim excess.
  7. Spoon the butternut squash and onion mixture into the prepared pastry shell evenly.
  8. Place the tart in the preheated oven and bake for 25-30 minutes or until the pastry is golden brown and filling is bubbling.
  9. Allow the tart to cool for about 10 minutes before slicing.

Notes

Serve with a side salad or pair with a crisp Chardonnay. For extra flavor, garnish with fresh herbs or red pepper flakes.
