- 3 cups pasta (fusilli or farfalle)
- 2 medium leeks, sliced
- 2 cups mushrooms, sliced (shiitake or cremini)
- 1.5 cups Gruyere cheese, shredded
- 2 cloves garlic, minced
- 2 tablespoons butter
- 1 cup heavy cream
- 1/2 cup Parmesan cheese, grated
- Salt and pepper to taste
- 1 tablespoon fresh thyme, chopped
Instructions
- In a large skillet, melt the butter over medium heat. Add the sliced leeks and a pinch of salt, sautéing for about 7-10 minutes until they become soft and caramelized.
- Once the leeks are caramelized, add the sliced mushrooms and minced garlic. Cook on medium heat for another 8-10 minutes until the mushrooms are browned.
- Pour in the heavy cream, stirring to combine. Let it simmer for about 5 minutes to thicken slightly.
- Reduce heat to low and gradually mix in the Gruyere cheese until melted and creamy. Season with salt and pepper, then stir in the fresh thyme.
- Cook the pasta according to package instructions until al dente. Drain, reserving a cup of pasta water. Add the pasta to the skillet, tossing with the sauce.
- Serve warm, garnished with grated Parmesan and additional thyme.
Notes
Consider adding spinach or broccoli for an extra nutrient boost. Use fresh herbs for garnish.
