Description

A rich and comforting pasta dish featuring earthy mushrooms and sweet caramelized leeks enveloped in creamy Gruyere cheese.


Ingredients

  • 3 cups pasta (fusilli or farfalle)
  • 2 medium leeks, sliced
  • 2 cups mushrooms, sliced (shiitake or cremini)
  • 1.5 cups Gruyere cheese, shredded
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • 1 cup heavy cream
  • 1/2 cup Parmesan cheese, grated
  • Salt and pepper to taste
  • 1 tablespoon fresh thyme, chopped

Instructions

  1. In a large skillet, melt the butter over medium heat. Add the sliced leeks and a pinch of salt, sautéing for about 7-10 minutes until they become soft and caramelized.
  2. Once the leeks are caramelized, add the sliced mushrooms and minced garlic. Cook on medium heat for another 8-10 minutes until the mushrooms are browned.
  3. Pour in the heavy cream, stirring to combine. Let it simmer for about 5 minutes to thicken slightly.
  4. Reduce heat to low and gradually mix in the Gruyere cheese until melted and creamy. Season with salt and pepper, then stir in the fresh thyme.
  5. Cook the pasta according to package instructions until al dente. Drain, reserving a cup of pasta water. Add the pasta to the skillet, tossing with the sauce.
  6. Serve warm, garnished with grated Parmesan and additional thyme.

Notes

Consider adding spinach or broccoli for an extra nutrient boost. Use fresh herbs for garnish.
