- 1 ½ cups crushed graham crackers
- ½ cup melted unsalted butter
- ¼ cup granulated sugar
- 16 oz cream cheese, softened
- 1 cup granulated sugar
- ¼ cup sour cream
- 3 large eggs
- 1 tsp vanilla extract
- 3 ripe bananas, sliced
- ⅓ cup brown sugar
- 2 tbsp light rum
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine crushed graham crackers, melted butter, and granulated sugar. Mix until the crumbs are evenly coated.
- Press the mixture into the bottom of a 9-inch springform pan and bake for 10 minutes.
- In a large bowl, beat cream cheese, granulated sugar, and sour cream until smooth. Add eggs one at a time, mixing well after each addition.
- Stir in vanilla extract, then pour the mixture into the cooled crust.
- Bake for 50 minutes until the center jiggles slightly. Turn off the oven, crack the door, and let cool for 1 hour.
- In a skillet, melt butter over medium heat. Add sliced bananas and brown sugar, cooking for about 5 minutes until golden.
- Drizzle in rum, stir, and let simmer for 2 minutes before removing from heat.
- Top the cooled cheesecake with the caramelized banana mixture and refrigerate for at least 4 hours or overnight before serving.
Notes
Use overripe bananas for the best sweetness. For a gluten-free option, substitute the crust with almond flour.
