  • ¼ cup sour cream
  • 3 large eggs
  • 1 tsp vanilla extract
  • 3 ripe bananas, sliced
  • ⅓ cup brown sugar
  • 2 tbsp light rum

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine crushed graham crackers, melted butter, and granulated sugar. Mix until the crumbs are evenly coated.
  3. Press the mixture into the bottom of a 9-inch springform pan and bake for 10 minutes.
  4. In a large bowl, beat cream cheese, granulated sugar, and sour cream until smooth. Add eggs one at a time, mixing well after each addition.
  5. Stir in vanilla extract, then pour the mixture into the cooled crust.
  6. Bake for 50 minutes until the center jiggles slightly. Turn off the oven, crack the door, and let cool for 1 hour.
  7. In a skillet, melt butter over medium heat. Add sliced bananas and brown sugar, cooking for about 5 minutes until golden.
  8. Drizzle in rum, stir, and let simmer for 2 minutes before removing from heat.
  9. Top the cooled cheesecake with the caramelized banana mixture and refrigerate for at least 4 hours or overnight before serving.

Notes

Use overripe bananas for the best sweetness. For a gluten-free option, substitute the crust with almond flour.
