Description

Delightful mini cannoli filled with a creamy ricotta filling, perfect for impressing guests at any gathering.


Ingredients

  • 1 cup pasta flour (or all-purpose flour)
  • 2 egg yolks
  • 2 tablespoons white wine (or vinegar)
  • 2 tablespoons unsalted butter
  • 2 tablespoons granulated sugar
  • 1 cup ricotta cheese
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup mini chocolate chips
  • 1/2 teaspoon cinnamon

Instructions

  1. Mix flour, sugar, and salt in a bowl, then create a well in the center. Add the egg yolks, melted butter, and wine. Mix until the dough forms a ball.
  2. Place the dough on a floured surface and knead for about 5-7 minutes, until it becomes smooth and elastic. Cover with plastic wrap and let it rest for 30 minutes.
  3. Once rested, roll out the dough until it is thin (about 1/8 inch thick). Use a round cutter (about 3-4 inches in diameter) to cut out circles.
  4. Heat oil in a deep pot to 350°F (175°C). Wrap each dough circle around a cannoli tube and fry until golden brown, approximately 2-3 minutes. Remove and drain on paper towels.
  5. In a bowl, combine ricotta, powdered sugar, vanilla extract, and cinnamon. Mix until creamy and smooth. Fold in mini chocolate chips.
  6. Once the shells are cool, carefully remove them from the tubes. Using a piping bag, fill each shell with the ricotta mixture until they are generously stuffed.
  7. Dust filled cannoli bites with powdered sugar, optionally garnish with more chocolate chips or crushed pistachios, and serve immediately for the best texture.

Ensure to rest the dough for tender shells, and avoid overcrowding the frying pot.
