Description

Delicious and fun bite-sized cake pops that are perfect for any occasion.

Ingredients

  • Cake Mix (chocolate, vanilla, or red velvet)
  • Eggs
  • Vegetable Oil (or coconut oil)
  • Frosting (or Greek yogurt/nut butter)
  • Chocolate Coating (dark, milk, or white chocolate)
  • Sprinkles (edible glitter or chopped nuts)

Instructions

  1. Prepare the cake mix according to the package instructions with eggs, oil, and water. Bake and let cool on a wire rack.
  2. Crumble the cooled cake into fine crumbs in a large mixing bowl.
  3. Mix in the frosting gradually until you reach a moldable consistency.
  4. Roll tablespoons of the mixture into balls, about 1 inch in diameter.
  5. Chill the cake balls on a lined baking sheet for about 30 minutes.
  6. Melt the chocolate coating in the microwave or double boiler until smooth.
  7. Dip one end of each lollipop stick into the melted chocolate and insert into a cake ball.
  8. Carefully dip each cake pop into the melted chocolate and let excess drip off.
  9. Add sprinkles before the chocolate sets.
  10. Allow to harden completely before serving.

Notes

For a healthier option, substitute cake mix with almond flour and choose sugar-free frosting.
