- 1 ripe pineapple
- 1/4 cup brown sugar
- 1 teaspoon cinnamon (optional)
- 1 tablespoon melted butter or coconut oil
- Fresh lime juice (from 1 medium lime)
Instructions
- Prepare the Pineapple: Slice off the crown and base of the pineapple, then peel the skin and remove the ‘eyes.’
- Cut into Rings: Cut the pineapple into 1-inch thick rings for optimal grilling.
- Mix the Brown Sugar and Spices: In a bowl, combine brown sugar and cinnamon (if using).
- Brush with Butter or Coconut Oil: Mix melted butter or coconut oil with lime juice and brush on both sides of the pineapple rings.
- Coat with the Sugar Mixture: Sprinkle brown sugar mixture over both sides of pineapple rings.
- Preheat the Grill: Preheat your grill to medium heat, around 350°F to 400°F (175°C to 200°C).
- Grill the Pineapple: Grill each side for about 3-4 minutes until golden brown.
- Serve Warm: Let the grilled pineapple rest before serving warm on its own or with a topping.
