Boston Cream Pie is a classic dessert featuring layers of tender cake, rich pastry cream, and a glossy chocolate ganache, perfect for any celebration.

- 1 cup cake flour
- 1 cup granulated sugar
- 1 ½ tsp baking powder
- ¼ tsp salt
- ½ cup unsalted butter, softened
- 3 large eggs
- ½ cup whole milk
- 1 tsp vanilla extract
- 1 cup heavy cream
- 6 oz dark chocolate, chopped
- ½ cup powdered sugar
Instructions
- Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans. Mix flour, baking powder, and salt in a bowl.
- Cream together butter and sugar until light and fluffy, about 3-5 minutes.
- Add eggs one at a time, ensuring each is well mixed before adding the next.
- Alternately add dry ingredient mixture and whole milk to the butter mixture, starting and ending with flour.
- Divide batter between prepared pans and bake for 25-30 minutes. Cool in pans for 10 minutes, then transfer to wire racks to cool completely.
- For the pastry cream, whisk together milk, sugar, and vanilla in a saucepan over medium heat until hot. Whisk eggs and cornstarch in another bowl. Gradually add hot milk to egg mixture, then return to the saucepan and cook until thick.
- Remove from heat, add butter, and stir until melted. Cover with plastic wrap touching the surface and refrigerate until set.
- To prepare ganache, pour heated cream over chopped chocolate and stir until smooth.
- Assemble the cake by placing one layer on a platter, spreading pastry cream evenly, and topping with the second layer.
- Drizzle ganache over the top, allowing it to drip down the sides.
Notes
For a lighter alternative, use Greek yogurt instead of heavy cream in the pastry cream.
