Description

Delicious cookies inspired by the classic Boston Cream Pie, filled with creamy vanilla custard and topped with chocolate.


Ingredients

  • 2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 3/4 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/4 cup heavy cream
  • 1 small box instant vanilla pudding mix
  • 1 cup semisweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together the flour, baking powder, and salt.
  3. In a separate large bowl, beat the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the egg and vanilla extract until well combined.
  5. Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined.
  6. In a separate bowl, whisk the heavy cream and instant vanilla pudding mix together and set aside to chill.
  7. Scoop spoonfuls of dough onto a lined baking sheet, leaving space for spreading.
  8. Bake for 12-14 minutes, or until the edges turn golden brown.
  9. Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  10. Fill half of the cookies with the chilled cream filling, and top with another cookie.
  11. Melt the chocolate chips and drizzle over each cookie sandwich.

Notes

For a dairy-free option, replace butter with coconut oil and heavy cream with almond or coconut milk.
