Delicious cookies inspired by the classic Boston Cream Pie, filled with creamy vanilla custard and topped with chocolate.

- 2 cups all-purpose flour
- 3/4 cup granulated sugar
- 1/4 cup brown sugar
- 3/4 cup unsalted butter, softened
- 1 large egg
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1/4 cup heavy cream
- 1 small box instant vanilla pudding mix
- 1 cup semisweet chocolate chips
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, whisk together the flour, baking powder, and salt.
- In a separate large bowl, beat the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined.
- In a separate bowl, whisk the heavy cream and instant vanilla pudding mix together and set aside to chill.
- Scoop spoonfuls of dough onto a lined baking sheet, leaving space for spreading.
- Bake for 12-14 minutes, or until the edges turn golden brown.
- Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
- Fill half of the cookies with the chilled cream filling, and top with another cookie.
- Melt the chocolate chips and drizzle over each cookie sandwich.
Notes
For a dairy-free option, replace butter with coconut oil and heavy cream with almond or coconut milk.
