A delightful twist on the classic Boston Cream Pie, these cookie bites offer the same delicious flavors in a convenient, bite-sized form.

- ½ cup unsalted butter, softened
- ½ cup granulated sugar
- ½ cup brown sugar
- 1 large egg (or 1 flax egg)
- 1 teaspoon vanilla extract
- 1 ½ cups all-purpose flour (or gluten-free flour blend)
- ½ teaspoon baking powder
- ½ teaspoon baking soda
- ½ cup cocoa powder
- ½ cup heavy cream (or coconut cream)
- 1 cup chocolate chips (semi-sweet or dairy-free)
- Powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. Cream together butter, granulated sugar, and brown sugar until light and fluffy.
- Add egg and vanilla extract, mixing until combined. If using a flax egg, prepare and add it here.
- In a separate bowl, whisk together flour, baking powder, baking soda, and cocoa powder. Slowly add to the wet mixture, blending until just combined.
- Scoop tablespoon-sized amounts of dough, roll into balls, and flatten slightly on the baking sheet. Bake for 10-12 minutes until soft but set.
- While the cookies bake, heat heavy cream until hot, stir in chocolate chips until melted and smooth, then let cool to thicken.
- Once cookies are cool, fill half with chocolate ganache and sandwich with another cookie. Dust with powdered sugar if desired.
Notes
For a vegan option, substitute the egg with a flax egg, and use dairy-free chocolate chips.
