Description

Deliciously unique banana cream cookies that blend the rich flavor of ripe bananas with the buttery goodness of classic cookies.


Ingredients

  • 1 cup ripe bananas (mashed)
  • 1 1/2 cups all-purpose flour
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter (softened)
  • 1 large egg
  • 1 tsp vanilla extract
  • Optional add-ins: chopped nuts, chocolate chips, or shredded coconut

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large mixing bowl, mash the ripe bananas until smooth.
  4. Add softened butter, brown sugar, and granulated sugar to the bananas, and cream together until light and fluffy.
  5. Mix in the egg and vanilla extract until fully combined.
  6. Slowly add the dry ingredients to the banana mixture and stir gently until just combined.
  7. If desired, fold in any optional add-ins.
  8. Drop spoonfuls of cookie dough onto the prepared baking sheets, spacing them 2 inches apart.
  9. Bake for 12-15 minutes or until edges are lightly golden.
  10. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

For a vegan version, replace the egg with a flax egg and butter with coconut oil.
