Deliciously unique banana cream cookies that blend the rich flavor of ripe bananas with the buttery goodness of classic cookies.

- 1 cup ripe bananas (mashed)
- 1 1/2 cups all-purpose flour
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsalted butter (softened)
- 1 large egg
- 1 tsp vanilla extract
- Optional add-ins: chopped nuts, chocolate chips, or shredded coconut
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a medium bowl, whisk together flour, baking powder, and salt.
- In a large mixing bowl, mash the ripe bananas until smooth.
- Add softened butter, brown sugar, and granulated sugar to the bananas, and cream together until light and fluffy.
- Mix in the egg and vanilla extract until fully combined.
- Slowly add the dry ingredients to the banana mixture and stir gently until just combined.
- If desired, fold in any optional add-ins.
- Drop spoonfuls of cookie dough onto the prepared baking sheets, spacing them 2 inches apart.
- Bake for 12-15 minutes or until edges are lightly golden.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
For a vegan version, replace the egg with a flax egg and butter with coconut oil.
