Description

A wholesome breakfast that combines baked eggs, feta cheese, and nutritious vegetables for a delicious start to your day.


Ingredients

  • 200g Feta Cheese
  • 4 Eggs
  • 200g Cherry Tomatoes
  • 150g Fresh Spinach
  • 1 tablespoon Olive Oil
  • 2 cloves Garlic, minced
  • 1 teaspoon Red Pepper Flakes
  • Salt and Pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a baking dish, combine cherry tomatoes and spinach. Drizzle with olive oil and sprinkle with salt and pepper.
  3. Crumble feta cheese in the center of the tomato and spinach mix.
  4. Make small wells in the mixture and crack eggs into them.
  5. Add minced garlic, red pepper flakes, and more salt and pepper over the eggs.
  6. Bake for about 20-25 minutes, or until the eggs are set to your desired firmness.
  7. Serve immediately, garnished with fresh herbs if desired.

Notes

For a lighter version, substitute whole eggs with egg whites or a vegan egg alternative.
