Ingredients

  • 34 tablespoons ice water
  • 3 medium-sized apples (Granny Smith or Honeycrisp)
  • 1 cup sharp cheddar cheese, grated
  • 2 tablespoons fresh herbs (thyme or rosemary)
  • 2 tablespoons brown sugar
  • 1 tablespoon lemon juice
  • 1 egg wash (1 egg beaten with 1 tablespoon of water)

Instructions

  1. Combine flour and salt in a mixing bowl. Add chilled butter and blend until resembling coarse crumbs.
  2. Gradually add ice water, one tablespoon at a time. Form into a disk, wrap in plastic, and chill for at least 30 minutes.
  3. Preheat the oven to 400°F (200°C).
  4. Thinly slice the apples and mix with cheese, brown sugar, lemon juice, and half the herbs in a bowl.
  5. Roll out the dough into a 12-inch circle on a floured surface and transfer to a parchment-lined baking sheet.
  6. Spoon the apple mixture onto the dough center, leaving a 2-inch border. Fold the edges over the filling.
  7. Brush crust with egg wash and sprinkle with remaining herbs and a pinch of salt.
  8. Bake for 35-40 minutes until golden brown and apples are tender.
  9. Cool for 10 minutes before slicing and serve warm or at room temperature.

Notes

For a gluten-free crust, consider almond flour; for a healthier alternative, use coconut oil instead of butter.
