A delightful Apple Cheddar Galette that marries the sweetness of apples with rich cheddar cheese and crispy herbs.

- 1 ½ cups all-purpose flour
- 1 stick unsalted butter, chilled and cubed
- ½ teaspoon salt
- 3–4 tablespoons ice water
- 3 medium-sized apples (Granny Smith or Honeycrisp)
- 1 cup sharp cheddar cheese, grated
- 2 tablespoons fresh herbs (thyme or rosemary)
- 2 tablespoons brown sugar
- 1 tablespoon lemon juice
- 1 egg wash (1 egg beaten with 1 tablespoon of water)
Instructions
- Combine flour and salt in a mixing bowl. Add chilled butter and blend until resembling coarse crumbs.
- Gradually add ice water, one tablespoon at a time. Form into a disk, wrap in plastic, and chill for at least 30 minutes.
- Preheat the oven to 400°F (200°C).
- Thinly slice the apples and mix with cheese, brown sugar, lemon juice, and half the herbs in a bowl.
- Roll out the dough into a 12-inch circle on a floured surface and transfer to a parchment-lined baking sheet.
- Spoon the apple mixture onto the dough center, leaving a 2-inch border. Fold the edges over the filling.
- Brush crust with egg wash and sprinkle with remaining herbs and a pinch of salt.
- Bake for 35-40 minutes until golden brown and apples are tender.
- Cool for 10 minutes before slicing and serve warm or at room temperature.
Notes
For a gluten-free crust, consider almond flour; for a healthier alternative, use coconut oil instead of butter.
