- 1 cup dried cherries

Instructions
- Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
- In a large mixing bowl, beat together the softened butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes).
- Add in the eggs, one at a time, mixing well after each addition, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture to the butter-sugar mixture, blending until just combined.
- Gently fold in the chopped almonds and dried cherries (plus white chocolate chips if using).
- Using a tablespoon or cookie scoop, place mounds of dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 12-15 minutes, or until the edges are lightly golden.
- Remove from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack.

For a dairy-free option, substitute butter with coconut oil. Ensure not to overmix the dough to maintain cookie texture.
