Instructions

  1. Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  2. In a large mixing bowl, beat together the softened butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes).
  3. Add in the eggs, one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture to the butter-sugar mixture, blending until just combined.
  5. Gently fold in the chopped almonds and dried cherries (plus white chocolate chips if using).
