- 1 lb Salmon fillets
- 1 tbsp Olive oil
- 1 tsp Cumin
- 1 tsp Chili powder
- ½ tsp Salt
- ¼ tsp Black pepper
- 6 Corn tortillas
- 2 cups Cabbage, finely shredded
- 1 Carrot, grated
- ¼ cup Cilantro, chopped
- Juice of 1 Lime
Instructions
- Preheat your air fryer to 400°F (200°C). Pat the salmon fillets dry and place them in a bowl. Drizzle with olive oil, cumin, chili powder, salt, and black pepper. Ensure the fillets are fully coated in the seasoning.
- Lay the seasoned salmon in the air fryer basket. Cook for 8 to 10 minutes, depending on the thickness of the fillets. The salmon should be flaky and easily flaked with a fork when done.
- While the salmon cooks, prepare the slaw. In a large bowl, combine the shredded cabbage, grated carrot, cilantro, and lime juice. Toss until everything is well mixed.
- Once the salmon is cooked, take it out of the air fryer and let it rest for a minute. Flake the fish into large chunks. Warm the corn tortillas briefly in a pan or microwave to make them flexible.
- Fill each corn tortilla with a generous portion of flaked salmon, followed by a good helping of the cabbage slaw. Serve with lime wedges on the side for drizzling.
Notes
For a healthier option, consider using gluten-free tortillas or cauliflower rice. Store leftovers in an airtight container for up to 3 days.
