Instructions
Preheat your air fryer to 400°F (200°C). While it warms, pat mushrooms dry with a clean towel to remove surface moisture for crisping.
In a bowl, toss the mushrooms with oil, cornstarch, garlic powder, paprika, salt, and pepper until evenly coated and glossy.
Spread the mushrooms in a single layer in the air fryer basket. Avoid crowding; cook in batches if needed so every piece gets a little space to crisp.
Air fry for 8–10 minutes, shaking the basket halfway through. You’re aiming for edges that are golden and a center that’s tender but not mushy.
If you’re using lemon juice and herbs, toss them with the mushrooms right after they come out of the fryer. Add Parmesan or nutritional yeast for a savory finish, and a light drizzle of balsamic glaze if you like a tangy gloss.
Transfer to a warm plate, taste, and adjust salt if needed. Serve immediately while the surface is still crisp and fragrant with garlic and smoke.
Leftovers reheat best in a quick 2–3 minute blast at 350°F (175°C) to revive crispness. Add a spritz of lemon or a pinch of fresh herbs to refresh.
