  • Optional mix-ins: 1/2 cup mini chocolate chips or finely chopped dark chocolate; 1/4 cup finely chopped toasted nuts

Notes: For a lighter texture, keep the butter soft but not melted. If you don’t have cornstarch, a tablespoon or two of almond flour can help tenderize, but the standard cornstarch route keeps the cookies extra delicate.
