Pumpkin Spice Truffles Recipe

Ingredients

  • 1 cup pumpkin puree
  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup powdered sugar
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon vanilla extract
  • 1 cup white chocolate chips
  • 1/4 cup crushed graham cracker crumbs (for coating)

Tip: For a richer flavor, you can use dark chocolate chips instead of white chocolate.

Instructions

  1. In a large mixing bowl, combine the pumpkin puree, graham cracker crumbs, powdered sugar, pumpkin pie spice, and vanilla extract. Mix until well combined.
  2. Roll the mixture into small balls and place them on a baking sheet lined with parchment paper. Chill in the refrigerator for 1-2 hours until firm.
  3. In a microwave-safe bowl, melt the white chocolate chips in 30-second intervals, stirring in between until smooth.
  4. Dip each pumpkin spice ball into the melted white chocolate, coating evenly. Place back on the parchment paper.
  5. Sprinkle the crushed graham cracker crumbs on top of each truffle for decoration.
  6. Chill the truffles for another 30 minutes to set the chocolate.
